It's so simple ... and easy ... I wonder why I haven't thought of it before! Throwing some sauerkraut or other juice from a fermented food (I must try it with pickle juice or coconut water kefir next time) into a dip is something I'm going to do from now on.
But if you love hummus ... here's some bad news for the Paleo aficionado. Chick peas ... or garbanzos ... are legumes and therefore aren't allowed on a Paleo diet.
But they ARE a good source of protein, fiber, and antioxidants, and are considered a very satiating food that will naturally keep you full. They're also a good source of vitamins and minerals ... especially folate, magnesium, and zinc.
Opening a can of garbanzos allows you to do this whole recipe in 5 minutes or less. And it's up to you if a little bit of hummus schmeared on a Gluten Free bagel might totally mess with your Paleo sensibilities.
If you do, I've got a Paleo alternative for you (don't I always ... check out the Baked Ziti I'm gifting you with next week). Macadamias (my second-fave nut ... guess which one is first?) soaked for 24 hours like our much-used Paleo substitute ... cashews.
And then used just like garbanzos in the recipe. So ... to get to Paleo ... it's 5 minutes plus the 24 hours for soaking the nut. And then reduce the tahini (sesame seed paste) as you've added a ton of nuts already.
This is a basic recipe ... want more garlic ... add more ... like a thinner hummus ... add more fermented juice. Either way you make this ... you can't lose.
Well ... maybe you can as Paleo diets are famous for having the side benefit of weight loss.
Oh ... by the way ... the nutritional analysis is for the Paleo version ... hint ... hint ...
Hummus made traditionally or Paleo with soaked macadamias ... and Probiotic with fermented food juice? You can't beat the nutrition ... OR the taste!
Add all the ingredients (including drained chick peas OR macadamias) to your food processor or a high-speed blender. Process until smooth, adding more fermented juice to desired consistency.
Store in a glass container in the fridge for up to 1 week. Serve with cut-up veggies, Paleo crackers, or I schmear it on bagels.
