I thought I’d throw in yet another holiday recipe (actually ... you can serve this year-round) I absolutely LOVE! No … it’s not gingerbread cookies or a meringue-mushroomed yule log … it’s an air-fried turkey breast …
If you’ve read my recipes, you know I love, Love, LOVE my air fryer. As a matter of fact, I’m going to do my oft-made Chinese Barbecue Pork in it tonight.
Since I bought the really large air fryer, I’ve been trying a lot of different things. No cake yet (YES YOU CAN … I can’t wait to try “Grain Free Molten Lava Cakes”!)
But I DID make the following for my very tiny Thanksgiving (me and the cat … and the cat turned his nose up at it). This was so simple … a spice rub, a simple glaze brush the last 5 minutes, and the turkey was moist with a crackely-crisp skin. Need it say more?
I used the turkey for sandwiches, in soup, and an improvised turkey salad with a bit of curry and leftover cranberry sauce. The bones are also now in the freezer for some stock later this month. Eat it up … FOR REAL!
FYI ... you need a LARGE air fryer for this recipe ... at least a five-quart size. If you have a smaller one, try a boneless three-pound breast and cook for about 35 to 45 minutes.

Pre-heat air fryer to 350 degrees F.
Brush the olive oil all over the turkey breast.
Combine the thyme, sage, paprika, salt and pepper and rub the outside of the turkey breast with the spice mixture.
Transfer the seasoned turkey breast to the air fryer basket and air-fry at 350 degrees F for 25 minutes. Turn the turkey breast on its side and air-fry for another 12 minutes. Turn the turkey breast on the other side and air-fry for another 12 minutes. The internal temperature of the turkey breast should reach 165 degrees F when fully cooked.
While the turkey is air-frying, combine the maple syrup, mustard and butter in a small bowl. When the cooking time is up, return the turkey breast to an upright position and brush the glaze all over the turkey. Air-fry for a final five minutes until the skin is nicely browned and crispy. Let the turkey rest,, loosely tented with foil, for about five minutes before slicing and serving.
