OK ... this is my first foray into air fryer cake. I figured I couldn't lose here ... Chocolate Lava Cake (sounds earth-shattering to me!).
And I don't know why mamashire.com called this "Gluten Free". Because ... flourless and with coconut oil ... it looked more Paleo or Keto to me.
Especially since the sweetener involved consisted of both a sugar alcohol and stevia ... both zero glycemic-index (a number assigned to carbohydrate-containing foods according to how much that food increases blood sugar).
I must admit that I gotta have SWEETS! And ... since I'm eating-disorder-recovered ... I'm OK with one sweet a day.
But I've gotta have that sweet! Or else I'm prone to eat the flan at Cabrera's (my fave Mexican restaurant ... they make their own) or the cream pie at the hospital (frozen). Both give me tons of mucus (yuck!) the next day.
This ... a one-mix-in-the-dish simple-ingredient (but you gotta have the right sweeteners ... the original recipe recommended "NOW BetterStevia") was that sweet-attack solution! Mix it up, throw it in the air-fryer, and enjoy!
What could be better than that! Warm ... gooey ... chocolate-y goodness! Eat it UP ... I know you will!
P.S. I have to admit ... I put this recipe up WITHOUT having tried it. But ... looking at it ... I knew it was exceptional. And it WAS!
I used cacao powder ... but think next time I'll get the finer-grind cocoa powder ... which might make this a different taste altogether. And will make this often as it's super easy to make. And SUPER-GOOD!
Warm, gooey chocolate-y goodness is just a scant short minutes away. Eat UP this easy-peasy Air Fryer Paleo Chocolate Lava Cake.
Whisk all ingredients in a two-cup glass Pyrex dish or ramekin.
Preheat the air fryer at 350 degrees F for just a minute.
Place glass dish with cake mix into the air fryer and bake at 350 degrees F for 8 to 9 minutes.
Carefully remove dish with an oven mitt.
Let cool a few minutes then Eat It UP!
