Here's one of the most kid-pleasin' (and me-pleasin') dishes I know! I call it Almost-Paleo Chili Mac because it DOES traditionally include beans, which are controversial in Paleo diets.
And pasta, which is definitely not Paleo. I don't have the heart, however, to use spiralized veggies or slimy shirataki ... but you could. There ARE Paleo pasta recipes but I'm not goin' there either ... don't have the time.
But I DO love Banza pasta, not only because it has 25% less carbs and more fiber, but because it has some kid-pleasin' (AND me-pleasin') shapes like wheels and alphabets.
Actually, I'm hooked on the bowties (farfalle). As a kid, bowtie noodles, cottage cheese, butter, and LOTS of pepper were a fave comfort food dish. Since I was raised Jewish, dairy dishes were de rigour at my house. Even if we didn't keep Kosher.
As a matter of fact, I sometimes abandon my Dairy Free dictum to soothe my soul with it. This isn't TOTALLY Paleo but IS a TOTAL taste-fest ... and most likely a traditional comfort food for many Americans.
I also love that the carbs top out at about 50 grams (about three servings ... like three slices of bread) and the fiber is more than half the recommendation ... for a generous serving. And that there's LOT of hidden veggies if your kids are vegetable-challenged. Eat it up ... FOR REAL!
Low-carb (but high on fiber and flavor) chili mac chock full of veggies, chickpea pasta, and beans! It's almost Paleo but not quite ... but your kids won't care if it's healthy ... they'll just eat it ALLL UP ...
Cook pasta 2 minutes less than the package directions. Drain
Meanwhile, heat oil in a large skillet over medium-high heat. Then add onion, peppers and celery and cook, stirring often, until softened, 4 to 5 minutes. Mix in garlic and cook, stirring, for 30 seconds. Next add beef, chili powder, and salt; cook, stirring and breaking up with a spoon, until the beef is no longer pink, 4 to 5 minutes.
Add tomatoes and their juice and broth; bring to a boil over high heat and cook 2 minutes. Then add beans and the cooked pasta, reduce heat to medium and cook, stirring often, until hot, 1 to 2 minutes. Remove from heat. Fold in sour cream. Serve topped with cheese and scallions and/or pickled jalapenos if desired.
