Yes ... I do believe in synchronicity ... and was amazed that ... when researching the word ... that it was first introduced by Carl Jung ... an idol of mine. I find his observations about human behavior spot-on even a hundred years later.
The word "synchronicity" is defined as 'events are 'meaningful coincidences' if they occur with no causal relationship yet seem to be meaningfully related". My whole life I've paid attention to these ... if I get the same message from different places two or three times I know it's where I need to go next.
The messages have NEVER been wrong ... even the ones that warn. The Avocado Cream was a small but not insignificant one.
I was trying to figure out how to make Al Pastor (a traditional Mexican pork dish) in my big slow cooker. Click on the name to see the recipe for Air Fryer Al Pastor Tacos ... which are scrumptious by the way.
Around the same time, I discovered non-dairy Follow Your Heart sour cream ... which tastes like the real thing (others ... unfortunately ... don't). True to my penchant for synchronicity, this recipe caught my eye somewhere on a now-forgotten website.
Simple and also scrumptious it's now a mainstay in my fridge. And you can whip it up in an instant. I use fennel all the time as an onion substitute ... so the fronds were easily-obtainable.
But you can double up on the cilantro if you're not a fennel fan. Eat it up ... FOR REAL!

Process avocados, sour cream, vinegar, oil, and the 2 Tbsp. of cilantro and fennel fronds (you can also finely chop them by putting them through the feeding tube with the motor running before you add the other ingredients) in a food processor until the mixture is very smooth, light, and thick. Season with salt.
Transfer avocado cream to a small bowl and top with cilantro leaves and more fennel fronds. Serve with chips or use a a taco, potato, veggie, or tostada topper. Or anywhere you'd like to put it!
