BBQ Pork Salad with Asian Sesame Dressing

Yields1 Serving

FOR THE SALAD:
 1 package (10 ounces) ready-to-eat salad greens
 1 can (11 ounces) Mandarin oranges, drained (or see other fruit choices below)
 1 cup Chinese Barbecue Pork, in 1/2-inch chunks
 ½ cup toasted, slivered almonds
 1 medium apple, chopped (or pineapple tidbits, chopped mango, papaya, jicama or other fruits of choice)
 ½ cup fresh snow or sugar snap peas
 ¼ cup Asian Sesame Dressing (below) or to taste
FOR THE DRESSING:
 ¼ cup Gluten Free soy sauce (tamari)
 2 tbsp toasted sesame oil
 ¼ cup white or rice vinegar
 ¼ cup olive or nut (walnut, hazelnut, etc.) oil
 1 tbsp sugar (any type) or 1/2 Tbsp. honey
TO MAKE THE DRESSING:

Place ingredients in a jar and shake well until sugar dissolves. Adjust sweetness with sugar and saltiness with salt to taste.

Keep for up to 3 weeks in the refrigerator. Bring to room temperature and shake well before using.

TO MAKE THE SALAD:

In a large bowl, combine all ingredients except dressing.

Drizzle over dressing and toss. Serve immediately.
