Birthday Cake Cookie Dough Energy Bites

Here’s a dynamite Paleo/Keto alternative to BOTH birthday cake AND cookie dough. Made as healthy as you can get it with cashew butter, maple syrup almond flour, and flaxseed meal.

 ½ cup cashew butter
 3 tbsp pure maple syrup
 1 tsp vanilla extract
 ¼ tsp almond extract
  cup fine blanched almond flour
 ¼ cup flaxseed meal, plus a Tbsp. more if needed
 2 tbsp sprinkles
 extra sprinkles for rolling

Add cashews butter, pure maple syrup and vanilla and almond extract to a medium bowl. Mix with a spatula until well combined and smooth.

Next add in almond flour and flaxseed meal. Mix until well-combined and a dough begins to form. If dough is too wet, add another Tbsp. or two of almond flour or flaxseed meal. Lastly, fold in sprinkles.

Use a medium cookie scoop to grab dough and then roll into balls. You should get about 8 balls. If desired, you can roll each ball into sprinkles.

Place energy bites on a baking sheet lined with parchment paper and place in the freezer for 30 minutes. Once they've hardened a bit, you can transfer to an airtight container and keep them in the fridge for 1 week (they go WAY before that) or in the freezer for up to 3 months.

Balls can be enjoyed straight from the freezer (if they're too hard, let them sit at room temperature for 5 to 10 minutes) ... as a matter of fact, the texture is better when they're stored in the freezer.
