Truth be told ... I'm cuckoo for wraps! Y'know that hodgepodge of stuff entwined in some tortillla-type covering.
But I didn't know why until I researched it. Ayuveda (East Indian medicine) believes that the nerve endings of the fingertips boost digestion.
And feeling your food signals the stomach that you are about to eat. As a result, you become more conscious of the taste, textures and aromas.
I'M IN!
But eating wraps became problematic when I went Paleo. Because most of these coverings are made of grains.
THEN I found Mission Grain-Free Tortillas ... AT MY LOCAL MARKET! There are other brands that make similar products ... Siete for example. I was in heaven!
Because I've loved this recipe from the cookbook, Wraps, for years. But ... before I could make it ... I had another Paleo-problem ... the Blue Cheese.
Then ... Follow Your Heart Bleu Cheese Crumbles came along. And ... along with their sour cream ... I made Unbelievably Dairy Free Blue Cheese Dressing. Which ... trust me because I'm a Blue Cheese dressing fan ... tastes just like the real thing!
And combined all that into a wrap that's taste-tastic for meals or snacks. And it's Paleo too!
The only problem ... the tortillas are smaller so you have to make more wraps. But who cares ... just have more! Eat them UP!
Super Bluesy-Cheesy Cherry-Chix Wrap has gone Paleo! Plant-based Bleu Cheese and grain-free tortillas make these a slam-dunk taste-tastic meal or snack.
Pour walnuts in a large dry nonstick skillet over medium heat and shake until they begin to color and release their oils. Remove and set aside.
Heat the oil in the same skillet over high heat. Add the chicken. Season with 1/2 tsp. kosher salt and 1/2 tsp. pepper. Cook until cooked through, 3 to 5 minutes, stirring to brown on all sides. Let cool. (Can be made ahead, cooled, and stored in the fridge)
Mix together the Bleu Cheese, Blue cheese dressing, cherries, and celery. Add the chicken. (The filling can be refrigerated and and finished later here too)
Toss the arugula and walnuts into the chicken mixture. Divide among the tortillas and wrap.
