I don't LIKE riced cauliflower ...don't like the texture ... even when fried and disguised with soy sauce, bits of egg, and bites of veggies. But this Fab 'N Fast Hashimoto's Mashed Cauliflower ... the texture IS right here ... and slathered with butter (or ghee), fresh herbs, and even Dairy Free cream cheese and/or sour cream ... MWAH!
Growing up ... my sister and I would grind potatoes and onions for the kugel. My mother was a terrible cook (it was a family joke) and her kugel was like a hockey puck.
So mashed potatoes were not even on my radar ... potatoes were kugel or pancakes. Until I married and "creamy mashed potatoes" were de rigueur on every festive table ... yet another family joke.
So I do include them on MY family festive table. But they all but disappeared when I went Paleo ... sweet potatoes don't cut the creamy goodness!
But ... here they are ... Paleo-reimagined. I call this Fab 'N Fast because you can actually make it in FIFTEEN MINUTES! And there's four major ingredients and lots of optional ones ... but the ones that really MAKE this super-simple dish.
And why am I calling it "Hashimoto's" too? Because thyroid disease affects one in 5 women (20%) and one in ten (10%) men ... and 50% go undiagnosed. Why? Because doctors don't think it important ...including my own.
I recently recommended that one of my developmentally disabled kids (one of my consulting jobs) be tested for Hashimoto's ... an autoimmune disease (caused mainly be leaky gut?) that's evident WAY BEFORE people are diagnosed with hypo-(underactive) thyroid. And he had to go to the HOSPITAL to get the test. AND THEN THEY LOST IT!
That's how rough it is to get this test. But 90% OF THOSE WITH THYROID DISEASE ALSO HAVE HASHIMOTO'S! And it's not tested? What's WRONG with our doctors?
OK ... off my soapbox ... on to the recipe. This mainly (I DID tweak it a little) comes from Isabella Wentz ... the thyroid pharmacist ... who healed herself (and many others) from Hashimoto's thyroiditis. And is ... in my opinion ... the gold standard for thyroid treatment.
And what does she use ... diet and supplements. Sound familiar? And what kind of diet does she use? Mostly Paleo ...
Here's what she recommends ... Sugar Free ... Processed Free ... Grain/Gluten Free ... Dairy Free ... Good Carbs. And when we're talking Processed Free we're attempting to avoid all the stuff available in packages with long ingredient lists. Whoa ... what about the stuff I recommend in my Gut Food newsletters.
Here's my take ... I recommend them because change is hard ... and any step you take along the wellness path is a triumph! So ... if you change somewhat ... you're still reducing toxic load and infllammation. Which is our goal.
Hence this recipe ... plant-based and mostly Processed Free. Pair this with a nice steak and salad ... it'll please even the most die-hard meat-and-potatoes man!
Just-like-Mom's (NOT mine!) ... this Hashimoto's mashed cauliflower is potatoes reimagined for Hashimoto's (& Paleo) diets. . With lots of optional add-ins to tickle your tonsils!
Place cauliflower in a steamer over a large pot of boiling water. Steam for 15 minutes until tender. Alternatively, boil cauliflower in salted water for 10 minutes or until fork tender. Remove and drain.
Blend cauliflower and garlic (and cream cheese if using) in a food processor on high setting or a high-speed blender until smooth. You may need to do this in batches of two or three, depending on the size of your container.
Transfer the cauliflower to a bowl and add fresh herbs, milk, and other add-ins as desired. Enjoy!
