Now my mom ... who was a terrible cook ... made the best Kasha Varnishkes (buckwheat, egg, and egg-bow noodles). I couldn't reproduce it even when she spent hours on the phone (no Facetime in those days) talking me through every step. And I'm a good cook!
Uh ... you may be wondering why you don't see the word "Paleo" in the title. That's because buckwheat is technically a pseudo- grain ... a piece of flowering rhubarb ... a seed akin to chia ... which is allowed on a Paleo diet. But its use is steeped in controversy.
Some think it's great for a Paleo diet because of its botanical origin and that it has antioxidants that reduce inflammation and blood pressure. Buckwheat trypsin enzyme, in addition to being antimicrobial, antibacterial, and possibly cancer-resistant, has also antibacterial and antitumor properties.
While others claim that there are anti-nutrients present in buckwheat (phytic acid, oxalates, and lectin, alpha-amylase, tryptin, enzyme, and protein protease inhibitors) that can contribute to leaky gut.
My advice ... try these low salicylate buckwheat pancakes and see if they agree with you. The other reason ... nut flours like coconut and almond are high salicylate and unacceptable if you're following a low salicylate diet. And this recipe IS Fab 'n Fast as there are only 6 ingredients and you can make the whole magilla in 15 minutes.
Not to mention ... buckwheat pancakes are THE BOMB! They were my fave when I was little. And with bananas ... you can't miss! How about some real maple syrup and butter to top them off too!
Nostalgic, tummy-tickling, low-salicylate, and almost-Paleo (you decide) these pancakes are a quick and kid-pleasing addition to any breakfast table!
Mash the banana well until creamy. You can do this by hand or I threw banana and eggs into my Vitamix on a medium setting.
Combine rest of ingredients and mix well by hand or about 10 or 15 seconds in your blender. The texture should be that of slightly thick pancake batter. Depending on the size of your banana you may need to use slightly more or less milk to get right thickness ... experiment.
Melt butter or ghee in a skillet over medium heat Pour about a quarter cup into the skillet and cook until bubbles form on top. Flip over and cook for a minute or two more. Serve with real maple syrup, butter, and low-salicylate fruit.
