Paleo air fryer chicken tenders ... could anything be more comfort-perfect? OK ... I admit it ... I'm a sucker for fried foods. But they don't suit my belly anymore.
That's why I purchased an air fryer ... and fell in love! And began to experiment with comfort foods I ALSO love ... like these.
I purchased a small one on Amazon for about $30. But, depending upon how many bells and whistles and capacity you want, these appliances can run up to $150.
I must also admit that I EAT FRIES AT LEAST TWICE A WEEK (Ore-ida brand is consistently Gluten Free). Air-fried you get all the flavor (and munchy goodness ) with less fat and tummy problems.
Oh ... and did I mention that this recipe is also PALEO ... substituting almond flour and ground flax seeds (for the crunch) for regular or Gluten Free panko breading (Ian's makes a great panko if Gluten Free is your preference).
Serve this recipe with a host of dipping sauces including ketchup, honey-mustard, Thousand Island dressing, Hoisin sauce (they make it Gluten Free too!) or whatever else your imagination can conjure up. Eat it up ... FOR REAL!
Paleo air fryer chicken tenders ... could anything be more comfort-perfect! Air frying is terrific for those of us that love fried foods but don't love the fat or tummy problems. And these are not only skinnier but PALEO to boot. Eat them up ... FOR REAL!
Pre-heat the air fryer to 400 degrees F.
Pat chicken dry with paper towels and season with a pinch of salt and pepper.
In a medium bowl, whisk eggs.
In a wide shallow container, whisk almond flour, flaxseed, and all of the seasoning until combined.
Dip chicken into the egg, then dredge in the flour mixture. Repeat until all chicken is coated.
Spray the air fryer basket generously with the avocado or coconut spray, and place as many chicken tenders in the basket that will fit with plenty of space in between. Spray tenders with additional spray to coat.
Fry for 10 minutes, flipping once at 5 minutes.
Repeat with the remaining chicken tenders until they have all been cooked through to reach an internal temperature of 165 degrees.
Serve with your favorite dipping sauce.
* If using boneless, skinless breasts cut into strips about 1/2" x 5".
**For a nut-free version, omit almond flour and use all ground flax seed instead.
