I’m ALWAYS on the hunt for GREAT Paleo recipes. That’s why this was such a blessing …
Because I had just whiled away a few hours yesterday for a fabulous early dinner al fresco (outside) in the 85-degree heat at my local haunt, Cabrera’s. I sometimes get the Champion burrito … I’ve never had one anywhere else with chile relleno tucked inside ... it's beyond special!
It always comes with their equally fabulous homemade guacamole. But I finish it with whatever amount of this huge burrito I eat. And then take the rest home.
So … faced with the prospect of a guacamole-less burrito the next day, I made this Paleo Avocado Dressing. It did not disappoint.
A smidge of Paleo-friendly mayo, a whole avocado, and tons of spice and garlic make this a more-than-acceptable guacamole substitute. I DO have a more guac-like dip recipe here too ... Avocado Cream.
But … slightly thinned … this makes for an equally fabulous dressing. Can't wait to try it on the spring mix that's coming tomorrow from Imperfect Foods ... my new delivery go-to for produce ... and more ...
And now you get a guac-choice. Eat them BOTH up ... FOR REAL!
Paleo Avocado Dressing. ... a smidge of Paleo-friendly mayo, a whole avocado, and tons of spice and garlic .... AY CARRAMBA!
Add all the ingredients except water to a blender or food processor and blend until smooth.
Add the water, a tablespoon at a time, until the dressing has reached your desired consistency.
Season to taste with salt and pepper.
Store in an airtight container in the refrigerator for up to 3 days.
