Banana baked goods are my absolute fave! They're moist and crumbly just like any other baked goods ... without the addition of any fat.
I love bananas anyway. Not to mention that they're prebiotic ... they feed good bacteria in your gut. And frozen ... they add terrific thickness to shakes ... better than all the artificial stuff in fast food ones.
These, however, are special! Because they're from a mostly Paleo and Indian website, raodyrecipes.com and are definitely Indian-flavor oriented with the added spices that have hidden health benefits.
Cardamom is anti-inflammatory, has antioxidant and diuretic properties that may lower blood pressure, may have anti-cancer properties, may help digestion, bad breath, lower blood sugar, treat bacterial infection, and improve breathing among other benefits.
Cinnamon … too … is a powerful antioxidant, is anti-inflammatory and antibacterial … and famous for lowering blood sugar. But ... health benefits aside ... they're totally out of this galaxy!
Serve as a side dish for your favorite Indian meal, as a snack, or to complement a fabulous brunch spread. Namaste!
Banana muffins with healing spices ... what could be better for your well-being and to tickle your palate. Serve with an Indian meal, breakfast goodie, or snack. Namaste!
Preheat the oven to 350 degrees F.
Line a muffin pan with parchment paper muffin cups. Alternately, use silicone muffin cups lightly sprayed with cooking spray; place on baking sheet.
Mix together dry ingredients (almond flour, baking soda, salt, cinnamon, cardamom)
In a separate bowl, whisk eggs and add in yogurt, maple syrup, and mashed bananas.
Combine wet and dry ingredients in one bowl. Add in the chocolate chips or walnuts if using.
Spoon the batter into muffin cups; bake for 25 to 30 minutes or until the center is firm (a toothpick inserted into the center should come out clean) and the tops are golden brown.
Remove from oven and let cool completely. Top with salted ghee or butter. Eat them UP!
