I gotta confess ... I bought yet another cookbook to complement the over 200 I already have (I'll post a pic soon on social media). Because I'm committed to going Paleo for a couple of months to lose some weight.
And this recipe just happened to be in the 5-ingredient cookbook I bought, Paleo in 28 (get it soon as it's $5.05 on sale and I paid full price). Never done mug cakes before ... especially for breakfast.
And this one was a winner! Subtly sweet without sweetener. And I thought it also might be fun to include some kid-pleasing chocolate chips (I love Lilys), rainbow sprinkles (The People's Keto Company), or coconut whipped cream or Truwhip Keto (contains some milk products).
It meets the criteria for my Fab 'n Fast collection as it has a total of 5 ingredients plus 2 spices. AND it's made in a whopping SEVEN MINUTES!
OK ... I just some put 1/2 Tablespoon each of bone broth protein, collagen, and glutamine in the version I'm eating RIGHT NOW and it's EVEN BETTER than the original recipe. And a STRONG GUT SOLUTION to boot!

And way you look at it ... this is a great morning breakfast for all ... and sweetened-up can be a fast dessert. Eat it UP!

A super-fast Paleo mug cake made in 2 minutes with 7 ingredients baked super-easy in the microwave. Top with berries and Paleo whip for a super-scrumptious taste!
In a microwave-safe mug, use a fork to mash the banana.
Add the egg, coconut milk, and vanilla extract to the mug and whisk together with a fork.
