I do lots of stuff with overripe bananas. Mainly because they make a wonderful complement to almond or coconut flour baked goods ... making a moist, light product.
And also because I just LOVE the taste of bananas. And the shape of muffins ... I make them in silicone cups, put them in muffin carriers, and carry them in my backpack for a lunch dessert or quick snack.
This particular recipe is super-simple and smacks of traditional banana nut bread. As well as being just my shade of sweet ... not too much and not too little.
The people from downshiftology.com suggested to add chocolate chips if desired but I like these just as is. You can't go wrong with these. Eat them up ... FOR REAL!
These Paleo Banana Nut Muffins are moist, light, and loaded with nuts. They're so scrumptious you can't eat just one ... and who would want to?
Preheat the oven to 350 degrees F.
Mash bananas with a fork in a mixing bowl. Add all of the other ingredients to the mixing bowl, except the nuts.
Use a hand mixer on medium speed to blend all the ingredients together for 30 seconds. Add the chopped nuts and stir together.
Line a muffin tin with muffin cups and evenly divide the batter between 12 muffin cups. (If using silicone muffin cups, oil each with oil or cooking spray and place on baking sheet). Sprinkle a little chopped nuts on top.
Bake the muffins for 22 to 25 minutes or until a toothpick comes out clean and they're lightly golden on top.
