You already probably know (if not you've been asleep all year) that we're having a world-wide heat wave ... 94 (and feels like 100) today in L.A.! So it's popsicle season ... and even better when these banana popsicles are in my Fab 'n Fast Paleo collection.
And have only THREE INGREDIENTS! And a LESS THAN 5-MENUTE PREP TIME! Of course, you have to freeze them. The ingredients are probably available in EVERY home that cooks Paleo .
And so easy to make I'm gonna order more molds. There's only three ingredients here ... bananas, a milk alternative (I'm in love with Tache ... pistachio milk), and a sweetener (I've used honey, maple syrup, AND Lakanto maple syrup all with good results.)
You can also include things like cocoa powder, cinnamon, vanilla of other flavor extracts (almond?), chocolate chips or chopped nuts. And I've included below a little recipe for an instant chocolate hard shell ... another recipe you can use with stevia-sweetened (Lilly's) chocolate chips and coconut oil ... two other Paleo pantry staples.
And I also like sprinkles in everything (People's Keto are great!) ... However you do these ... they're luscious! And super-easy! And totally necessary for this time of year. Eat 'em up!

Cooling 3-ingredient popsicles perfect for our scorching summer days. And so easy you'll mold 'em in a snap! Make 'em yours with add-ins and a chocolate shell. Eat them up!
Combine all ingredients and optional ingredients (except for chocolate chips, nuts and/or sprinkles) in a blender and whirl until smooth. Then add solid add-ins like chocolate chips, nuts, or sprinkles.
Pour into molds, leaving a little space for the popsicles to expand while freezing. Add sticks (if they don't come with the molds) and freeze at least 4 hours until solid.
Combine chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second intervals, mixing well each time, until mixture is smooth ... about 1 to 2 minutes. It takes about a minute of stirring until they're fully combined; I'd use a whisk. Cool and store at room temperature in an airtight container.
Remove popsicle from mold. Dip in or drizzle on the chocolate. You can eat right away or store the dipped/drizzled popsicles on a cookie sheet in the freezer until solid and store in the freezer. The chocolate may whiten a bit.
