Labor Day ... and I wanted to do some chocolate-chip Paleo waffles for breakfast (sorry ... no recipe ... I use Birch Bender's mix... and now they're the Keto-Van's of frozen waffles). But I didn’t want the artificiality of sugar-free syrup anymore.
And I’m sensitive to maple. And have issues with other kinds of syrups too … especially the sugary ones.
So I was THRILLED to find this simple recipe. And whipped it up in a hot minute!
I didn’t have blueberries. But blackberries made a great substitute. I guess you could use any berry … and perhaps any type of fruit … for this.
I used it as a syrup. But it could serve as a topping for cheesecake (see below). Or a sauce for pork or chicken. The possibilities are endless …
Oh ... and I forgot to tell you ... berries have AMAZING health benefits ... including lots of nutrients, lots of antioxidants, and anti-inflammatory powers and more! And remember ... it's Paleo too!

In a small saucepan, combine the blueberries and the water.
Heat over medium heat until boiling; bring to a simmer. Use a whisk to mix and mash the berries until they have released enough liquid to make it look soupy. Simmer for 10 minutes until thickened to desired consistency, stirring occasionally.
You can stir in any or all of the optional ingredients after 5 minutes. The gelatin will thicken the mixture as it cools. The vanilla and orange give it a wonderful aromatic flavor. And the stevia can add sweetness. I chose (my little innovation) to add a little arrowroot mixed with water to the mixture, which thickened it nicely.
Store in a glass jar in the fridge for up to a month (I'm going to make a ton more next time!)
