Paleo Blueberry Compote

I was THRILLED to find this simple recipe. It was a terrific syrup for my Paleo waffles. And chock-full of AMAZING health benefits like antioxidants and anti-inflammatories. And Paleo to boot!

 2 cups fresh blueberries (or frozen ... or any other type of berry)
 ¼ cup water
OPTIONAL:
 1 tsp vanilla extract
 1 tsp orange zest
 a bit of stevia
 1 tsp gelatin
 1 tsp arrowroot mixed with a little water

In a small saucepan, combine the blueberries and the water.

Heat over medium heat until boiling; bring to a simmer. Use a whisk to mix and mash the berries until they have released enough liquid to make it look soupy. Simmer for 10 minutes until thickened to desired consistency, stirring occasionally.

You can stir in any or all of the optional ingredients after 5 minutes. The gelatin will thicken the mixture as it cools. The vanilla and orange give it a wonderful aromatic flavor. And the stevia can add sweetness. I chose (my little innovation) to add a little arrowroot mixed with water to the mixture, which thickened it nicely.

Store in a glass jar in the fridge for up to a month (I'm going to make a ton more next time!)
