I just love candied pecans ... or any nuts for that matter ... on my salad. Or for a snack or swanky dish topping. That's why I was so glad to find this recipe for Fab 'n Fast Paleo Maple-Spice Pecans.
In ... of all places ... a very old copy of GFF Magazine. It's usually devoted to just Gluten Free ... but has some Paleo-friendly recipes too.
It was great to see that you could use Paleo-friendly maple syrup to "candy" the nuts. And you can use any nut you desire ... but pecans and walnuts are probably your best bet.
Coconut adds an exotic touch ... and it's one of my fave mix-ins for any dish. Don't like it ... don't use it. You'll still get the sweetness and crunch promise that's part of any candied confection.
I LOVE these on a leafy green salad with some berries. And a simple olive oil and maybe fig vinegar dressing with a dash of mustard and a mince of shallots.
As in most Fab 'n Fast recipes, there are only 5 ingredients (plus spices). But it takes about 20 to 25 minutes to do. Depending upon your oven and how crispy and browned you want the nuts to be.
Cool completely and store in an airtight container at room temperature for up to one week, in the fridge for up to three weeks, or in the freezer for up to three months. But these will be gone a whole lot sooner than that ... trust me!
These candied pecans will add texture and flavor to any dish you'd like to top them with. Or a guiltless Paleo snack pleasure at any time. Eat it UP!

Preheat oven to 350 degrees F.
Whisk egg white in a medium-sized bowl until frothy. Toss in pecans to coat.
in a separate bowl, combine maple syrup, vanilla, salt, cayenne pepper, and coconut. Remove nuts from egg white and toss in this maple mixture.
Spread nuts in one layer on baking sheet covered with parchment paper. Bake for 10 minutes. Stir and bake for 5-10 more minutes until browned and crispy. Cool completely and enjoy!
