Preheat oven to 350 degrees F.
Whisk egg white in a medium-sized bowl until frothy. Toss in pecans to coat.
in a separate bowl, combine maple syrup, vanilla, salt, cayenne pepper, and coconut. Remove nuts from egg white and toss in this maple mixture.
Spread nuts in one layer on baking sheet covered with parchment paper. Bake for 10 minutes. Stir and bake for 5-10 more minutes until browned and crispy. Cool completely and enjoy!
