Now I know that this recipe for Fab 'n Fast Paleo Crockpot Taco Chicken DOESN'T fulfill oneĀ F 'n F criterion ... it's made in a crockpot.
But the recipe is so simple and the crockpot is so set-it-and-forget-it ... and the taste is so great with my Fab 'n Fast Taco Seasoning Mix that the time will just fly by.
The recipe calls for 3 pounds of chicken breast ... a whole lot ... but you can halve or third it (which is what I did as I live alone) to your tastes ... and it still came out great. And it's five whole ingredients even WITH the spices. What could be easier than that!
This is inspired by an allrecipes recipe. But I DO caution you that the chicken takes a lot less time than what is listed ... I used a pound of chicken and it only took an hour and a half to reach 165 degrees.
So ... my advice ... check the temperature periodically and DON'T OVERCOOK. Because of my due diligence, the chicken turned out juicy and wonderful.
So be careful and follow the directions .... not the cook time. And you'll have the best taco chicken you've ever had.
Oh ... and I've also included some taco instructions if you want to make tacos with the chicken. I found it to be the best ever ... and I prefer beef. All Paleo ... Gluten Free ... Dairy Free ... and delicious. Eat it UP!
Easy-to-make with 5 ingredients and DIY taco seasoning ... this chicken taco crockpot-cooked filling is Fab 'n Fast and super-scrumptious.
Stir all ingredients except chicken together in your crockpot until combined. Add chicken and spoon sauce mixture over top.
Cover and cook; check every half-hour after 1 hour of cooking on high or 2 hours on low until an instant read thermometer inserted into the center should read at least 165 degrees F.
Shred the chicken in the crock with two forks, then mix with the sauce. Use as an entree or in tacos (instructions follow).
Heat the tacos in a non-stick skillet until pliable. Fill with the chicken, lettuce, cheese, guacamole, sour cream, and optional tomatoes and onions. Fold over, eat, and ENJOY!
