A fragrant carpet of multi-pastels. A springy mat of sea-green grass. And SWANS (you can't see them in the picture below ... but they were there) ...
Not only swans (I was even chased by a gaggle of geese there once) ... we dined divine in this greenhouse-glassed room (I think it was called the Garden or Terrace Room [each room had a name]) that overlooked the garden. It was at Patricia Murphy's Candlelight Restaurant on Long Island that I first tasted the spongy-eggy goodness of popovers.
Y'see ... eating out was a BIG DEAL for my family. If you've read my recipes before, I often share that my mom was a terrible cook ... my sis and I often joked among ourselves that she couldn't even boil water ...
So eating out was the only way we got a decent meal. But ... this restaurant was waaay more than that ...
You were greeted at the door with baskets brimming with hot-from-the-oven cinnamon rolls and popovers. Even if you had reservations, you invariably had to wait with offered brimming plates of these.
And then ... even when you were shown to your table, lovely costumed ladies circulated with even more of these goodies. I often overstuffed ...
This graceful oasis is long gone. But the taste and texture of those popovers smothered in butter (real) and jam (homemade) has always lingered on my tongue-memory.
When I turned Paleo, I often wondered if I could reproduce fave foods without gluten, dairy, or carbs. But now .... after I've done it many times before ... I think I can .... (just check out most of the recipes on this website ... including Keto Burger Buns and Paleo Vanilla Cupcakes complete with chocolate frosting).
However ... I had NEVER tried popovers ... even when I was eating regular food. Scratch that ... when I ate inflammatory, gut-busting food. OK ... that's better!
But this time I actually BOUGHT a popover pan (G-d bless Amazon!) and made these. I have to admit that it's at least 60 years since I last had one at Patricia Murphy's so I really can't compare.
But these Paleo popovers were great ... with butter (real) and jam (Just Fruit). Eat them UP!
A total blast from Dietitian Jill's past (read the recipe blurb to find out why) ... these Paleo popovers have the same spongy-eggy goodness as the ones she's been craving for over 60 years.
Preheat the oven to 450 degrees F.
In a small bowl, combine the flours and salt.
In a medium-size bowl, lightly beat the eggs just to loosen them up. Then whisk in the coconut milk, water, and flour mixture. Continue whisking til just smooth.
Scoop about 1/4 teaspoon to a scant 1/2 teaspoon of the fat into each well of the popover pan, then place the greased pan in the preheated oven for about 5 minutes just until the fat starts to smoke. Carefully remove the pan from the oven and quickly pour 1/4 cup of the batter into each well.
Return the pan to the oven and bake for 15 minutes, then turn the oven temperature down to 350 degrees F and bake for another 15 minutes or until the popovers are golden and puffed. Times will vary based on the pan.

Molly (by the way my Jewish name is Molly) I don’t have the nutrition information for this recipe. It’s Paleo … Grain, Gluten and Dairy Free so I don’t depend so much on nutrition information. These recipes are low-carb and high in fat and protein. Paleo diets are a whole lifestyle and do promote weight loss and gut healing if you’re interested in that.
