Paleo Spaghetti Sauce with Ground Beef

Here's a super-simple but simply-superb (and naturally Paleo) Spaghetti Sauce with Ground Beef recipe! Dietitian Jill also varies it according to your food sensitivities.

 1 lb ground beef
 2 tsp coconut or olive oil, or ghee
 1 onion (or fennel bulb), chopped
 4 cloves garlic, minced
 1 small green pepper, diced
 1 (28 ounce) can diced tomatoes
 1 (16 ounce) can tomato sauce
 1 (6 ounce) can tomato paste
 2 tsp dried oregano (or 1 Tbsp fresh, chopped)
 2 tsp dried basil (or 2 Tbsp fresh, chopped)
 ¼ tsp dried lavender, ground in food mill or mortar and pestle (optional)
 1 tsp salt
 ½ tsp black pepper

Cook ground beef (or other meat) in large non-stick saute pan until brown, breaking up lumps. Drain on paper towels to reduce fat. Wipe out pan. (skip the draining and paper towels if using leaner cuts like chicken or turkey ).

Add oil to pan; turn heat to medium. Add onion (fennel), garlic, and green pepper and saute until vegetables are tender, about 5-7 minutes.

Stir diced tomatoes, tomato sauce, and tomato paste into pan. Season with dried spices (skip if using fresh), salt, and pepper. Turn heat to low and simmer for 1 hour, stirring occasionally.

If using fresh herbs and/or "Beyond Meat", add these after about 45 minutes of cooking.
