I realized as I'm readying my Fab 'n Fast collection for a cookbook that ... to make 5 ingredients tasty ... you have to also serve up super sauces and spice blends to make people want to scarf them up. Hence this Paleo Steak Rub.
As a matter of fact, these items should be in a separate section in the book. So that you can mix and match them to create your own fabulous creations. Sounds good to me ...
So I found this "Copycat Texas Roadhouse Steak Rub" from cozycook.com and tweaked it to Paleo sensibilities. I used Lakanto (or you could use coconut or even maple or date sugar) for the sweetener ... and topped it off with my fav Colima sea salt.
A good salt is so important as it penetrates the surface of the meat ... allowing it to break down the muscle fibers. And making a more tender steak (or chicken). Yes ... you can use this on other meats too.
Also ... I experimented with different chili powders like ancho and chipotle for different tastes. And replaced the cornstarch with tapioca starch or arrowroot. In addition ... it even contains several healing spices ... including turmeric.
Oh ... and this also makes about enough for two steaks. So I quintupled it, put it in a small jar, shook in up, and it's sitting with my many other Paleo ingredient jars on the rim of my kitchen counter.
The end result ... MWAH! You can do these on the grill or even in my fav air fryer (I give you directions here). So ... just EAT IT UP!
A Fab 'n Fast Steak (and chicken, pork, or even salmon) Rub done in 5 minutes that makes your meat so mouthwatering you'll come back for more!
Combine all ingredients in a small jar. Shake it thoroughly, YOU'RE DONE!
To cook steak or chicken, generously cover the meat on all sides with the seasoning and let it rest at least 40 minutes. It will also return to room temperature ... which is the best way to cook meat.
Grill over hot coals Alternately you can air fry at 400 degrees F (coat the fryer with oil or non-aerosol cooking spray first). Cook 4-5 minutes for medium rare on either, flip over and cook the same amount of time or 7 for medium, 10 for well-done (but why would you do that?) until done.
I'd use the instant read thermometer toward the end of cooking time so you don't overdo to the desired doneness below.
Rare: 120°–125°
Medium Rare: 130°–135°
Medium: 140°–145°
Medium Well: 150°–155°
Well Done: 160°–165°
Let rest 5 minutes before eating. Enjoy!
