I love tacos and all things Mexican since I moved to L.A. at 18. Hence these Fab 'n Fast Paleo Tacos.
I go to Mexican restaurants a lot ... and they are a great place to get food Gluten Free as corn tortillas abound. But these dishes often drown in cheese and sour cream ... and have a lot of rice and beans in or near them to boot.
I love them ... but try to avoid them in my Paleo regime. So making these Fab 'n Fast ... and Paleo too ... was a challenge.
Because I wanted them to be authentic ... and authentic anything takes time. And I can't even refer you to the source material as the original book ... Tacos ... is out of print.
So I modified this to make it a lot easier. Didn't roast the coriander and cumin seeds as per the recipe ... takes too much time. But don't be daunted by the ingredient list ... there are just 5 major ones and lots of spices ... which really make the dish!
I've added some spices too ... some chili powder to spice it up more if you are so inclined ... and encourage you to add more to taste. I also upped the coriander and cumin from the original recipe as it wasn't to MY Taste ... and may not be yours ... spice accordingly ...
I used ground beef here, but you can also use ground turkey or chicken ... whatever you'd like or have on hand. And pair them with Fab 'n Fast Cassava Tortillas, plant-based Feta from Follow Your Heart, ready-made salsa, chopped cilantro, Violife Sour Cream, and whatever else you'd like to add. Eat 'em UP!
Can tacos be any better ... easy-peasy and Paleo too! Spice 'em up to your own taste and add ground meat of your choice. Pair with Grain Free tortillas and plant-based dairy and OLE!
In a medium-sized pan over medium-high heat, heat the olive oil, Add the onion (fennel) and garlic and saute for 3 minutes. Add the tomato and cook until most of the liquid has evaporated, about 4 to 5 minutes.
Add all the spices and saute 30 seconds, then add the meat and cook until cooked through ... about 10 minutes.
Serve on Grain Free tortillas and top with the salsa, cilantro, plant-based feta and sour cream. Fold and enjoy!
