When I was a kid, we called this Russian dressing. And liberally spread it on deli sandwiches and the iceberg lettuce wedge my dad laughingly called a salad.
I later learned the joys of salads loaded with different shades and textures of green, whatever veggies I had in the fridge, and even fruit and assorted crunchies. I loved them so much that I even became a salad chef for a time.
But ... even though I made many different dressings with many exotic ingredients ... Russian dressing is what I still use on my deli sandwiches, my burgers and fries, and sometimes on my own salads.
The recipe is simple ... ketchup and mayo make it Russian ... with pickle relish for the "islands". Make it Paleo with no sugar added ketchup (I like Halo and Cleaver ... sweetened with fruit) and relish.
This recipe is so simple that you can whip it up in a flash ... for your burgers or fabulous salad. Eat it up ... FOR REAL!
Tweak this simple Thousand Island dressing recipes by adding sugar-free ingredients and ... POOF ... it's Paleo. Great on everything including burgers, sandwiches and ... of course ... salads.
Mix all of the ingredients until well-combined. Taste and add more ketchup if it's too sweet, or more mayo if it's too tart. Chill until ready to serve.
