Gotta tell you that I CRAVE cake sometimes ... I have had a sweet tooth since I was small ... Jewish upbringing.
But I don't like bubble-gummy-sweet cake ... don't know if that was a prior learned taste or not. But these Paleo cupcakes are just the ticket ...
Not only are they healthy ... they're tasty ... and not too sweet! And paired with Paleo 2-Ingredient Chocolate Frosting ... they're heaven!
Don't laugh ... I actually bought a PASTRY BAG! Years ago when I was training to be a chef ... I had to admit to myself that I just wasn't a baker.
I was great at face make-up (my first job was as a makeup artist for Max Factor), but my iced cakes deserved an "F". So I just stopped ... desserts were an occasional cheesecake (which are also now Paleo).
But these guys are so easy. And I have to admit that I haven't used my pastry bag yet (I just used a spatula to frost my last ones). But I'm just a couple of YouTube videos away from doing it.
I also have to admit that I tried several versions of these cupcakes ... and then settled on this one from myheartbeats.com. Eat them UP ... FOR REAL!
Cupcakes gone Paleo? YES! Ice'em Paleo too ... and you'll not only miss regular goodies ... you'll become addicted! Eat 'em UP? YES!
Preheat the oven to 350 degrees F.
In a small bowl, combine the dry ingredients (almond flour through salt).
Add the maple syrup, melted butter/ghee, and vanilla extract to the bowl and mix well.
Add the eggs and mix well.
Spoon the batter into a cupcake pan (most use paper liners, but I love my silicone cups ... lightly grease, fill, and place on a cookie sheet ... and you've got a go-to container for your cupcakes).
Bake at 350 degrees F for 12 to 20 minutes or until toothpick inserted into center comes out clean. Allow the cupcakes to cool.
