Part of the name ... The Queen's Handwich ... is in gratitude to Queen Elizabeth II ... who died about two weeks ago. But it's also in deference to the Queen Mary ... the Long Beach, California ship-nee-hotel where ... as part of the Fit for Life team in the 1980's ... we served thousands of these there.
Also ... I NEVER understood WHY it was called "New York Goodwich". But ... upon "googling" this recipe ... it DOES seem to be attributed to Harvey and Marilyn Diamond, the authors of Fit for Life.
Were Harvey and Marilyn from New York? Dunno. And is "goodwich" an apt name? Nope ...
I'm much happier calling it a "handwich" or a wrap ... which is what it actually is. And welcomed the idea of it today as ... truth be told ... I was TIRED of salads ...
Sorry devoted salad friends but ... after years of working as a salad chef ... and creating my own daily (salad bars and bags help) ... I was BORED! I know I need my veggies (especially to stay regular these days) ... but UGGGHHH ...
Then I remembered these ... and how I made so many ... not to mention the fact that I had all these different Gluten Free and Grain Free tortillas left over from my last wrap fete ... my Bluesy Cheesy BLAH BLAH BLAH ...
Truth be told ... these handwiches really rekindled my love of veggies. And I love the fact that ... even though it's a recipe ... you can use any veggies you'd like.
But ... FYI ... the avocado, pickle, and BBQ onions (I use fennel instead) ... and your dressing of choice ... really make these! So don't scrimp on them!
Oh ... and the plastic wrap really helps because these tend to be drippy! Make up a bunch as they can keep for 2 to 3 days in the fridge. I guarantee they'll be gone by then ... Eat Them UP!
A blast from my "Fit for Life" past, these delectable, multi-textured Paleo wraps can not only revive your veggie-love, they can give you all the daily servings you need to keep you healthy and kickin"!
Cut broccoli into thin lengths, using only florets and the upper portion of the stalk. Steam broccoli and cauliflower in vegetable steamer, covered, over boiling water for 5 minutes or until vegetables are tender when pierced with the tip of a sharp knife.
Combine carrot, cabbage, and squash, and mix thoroughly.
In small skillet heat oil. Add onion (fennel) and saute until it begins to soften. Add barbecue sauce and continue sauteing, stirring frequently until onion (fennel) is thoroughly wilted.
Makes enough for 3 or 4 handwiches. Leftovers are delicious in any vegetable soup.
In hot dry skillet, heat the tortilla, flipping, until soft (don't crisp; you're just softening it so it will roll easily without cracking). Place on a large sheet of plastic.
Spread tortilla with mayonnaise or Paleo dressing. Add a line of broccoli down senter. Crumble cauliflower and place a line of it on broccoli. Add a line of pickle, a line of grated vegetables, and a line of Barbecued Onions (Fennel).
Top with lettuce, sprouts, and avocado. Sprinkle with Spike or other seasonings of choice.
Fold up bottom of tortilla lengthwise on filling, then roll tortilla crepe-style around filling.
Wrap tightly in plastic wrap until ready to serve. These will keep for 2 to 3 days in the refrigerator (if you hide them!).
Cut handwich in half and push plastic wrap partially down, but leave the other end closed to catch the drippy sauces.
