WEEELLL ... after my Paleo Paneer melted (it's not it's fault ... it just doesn't hold up to heat) ... I went in search of some other Dairy Free paneer for my Indian dishes. I turned instead to tofu ... and that became a journey also.
I tried a couple of pan-fried ones ... they fell flat. Then I returned to my beloved air fryer. And found this great recipe ... it's actually called Tofu Pakoda (aka Pakoras).
I did Paleo-tweak the recipe a little ... substituting tapioca flour for the rice flour. And also pressed the tofu to make sure it was firm during the cooking process.
It's the spices (and the frying) that makes this dish. You can also use it as a snack or salad topper.
But ... guess what ... it DOESN'T melt in either my Saag Paneer or Matar Paneer. And it's really tasty too. Eat it up ... FOR REAL!

Cut tofu into cube-size pieces. In a bowl, gather Ajwain seeds, tapioca and garbanzo bean flours, red chili and coriander powders, and salt. Add avocado oil and water and mix well. Transfer to the tofu and coat it well with the marinade.
Preheat air fryer to 400 degrees F for 5 minutes. Set tofu on the air fryer tray, making sure that the cubes aren't touching. Close air fryer and cook for about 11 minutes.
Tofu should be crispy and browned. Serve as a snack with sriracha sauce or fold into Indian dishes that call for paneer.
